The Café staff also takes into account supporting local and regional foods, thereby reducing food miles (the number of miles it takes for products to reach a restaurant), adding a positive impact on the dining experience. The Café strives to source each ingredient for every dish ensuring the best of what's available given the seasonality of each ingredient. The Chef believes in the importance of eating seasonally.
