GUY FIERI’S EL BURRO BORRACHO AT RIO ALL SUITE HOTEL

El Burro Borracho translates to “the drunken donkey,” which means this restaurant from television personality Guy Fieri is as fun and outgoing as Fieri himself.  It may be difficult getting to the entrees after sampling his signature salsas such as Grilled Pineapple-Jalapeño or Roasted Habanero-Lime. Guy’s Guacamole, made with serrano chiles, sweet onion and radish, can be enhanced with lobster, chorizo or crab. Among the authentically-prepared Mexican dishes are Crispy Mahi Mahi, Shrimp Juan Tacos, Flaming Queso Fundido, Acapulco Gold Salad, and Drunken Fish and Lava Rock Shrimp Tacos. And who can say no to house-made Churros or Chocolate Flan Cake? Check out the drool-worthy menu here.

CABO WABO CANTINA AT PLANET HOLLYWOOD MIRACLE MILE SHOPS

Cabo Wabo Cantina is reflective of that great beach town Cabo San Lucas, Mexico and of its owner, Sammy Hagar, the rock ‘n’ roll Hall of Famer. His persona is found in the restaurant’s coastal Mexican cuisine, award-winning tequilas, and a music venue where he is often found performing on stage. Views from the patio showcase the Bellagio Fountains and the Eiffel Tower. Discover Beef Short Rib Burritos, Jack & Coke BBQ Ribs, Sammy’s Tequila Shrimp, the large Nacho Platter, Baja Style Grilled Fish Tacos and the Wabolicious Cheeseburger. A real treat is the breakfast menu featuring Machaca Omelet, Huevos de Nacho and Cabo Wabo Potatoes. Get your Cabo on here.

DIABLO’S CANTINA AT MONTE CARLO

This two-story restaurant has vibrant Mexican food, views of the Strip and a giant Wheel O’ Sin that spins happy hour into an even happier hour. Celebrating comes easy with the frozen margarita bar. Begin with Serrano-Lime Guacamole or Diablo’s Hot Wings. Not hot enough? Take the Death Wing Challenge starting with Anaheim pepper wings. Move on to Fresno peppers, then Jalapenos, Serranos and, if you’re still standing, the Scotch Bonnet. Eat all the wings and get a t-shirt and your name on the Wall of Fame. Otherwise, relax and enjoy Seasoned Beef Tostada Salad, Red Chicken Chile Enchiladas, Beer-Battered Shrimp Tacos, the Veggie or Gringo Burrito, and Mesquite Grilled Tequila Chicken. Get your reservation here.
