THE ABSINTHE CART AT SAGE INSIDE ARIA RESORT & CASINO
Guests can choose from more than 15 different types of absinthe, including Marilyn Manson’s award-winning Mansinthe, at this farm-to-table restaurant by celebrated chef Shawn McClain. Selections are highlighted on the dessert menu and then rolled out to your table for your choice of service, such as, “traditional,” where ice water from the cart’s classic absinthe fountain drips onto a flaming sugar cube. Each type of absinthe is listed on a diagram to show whether guests will taste more flower, herb, fruit or anise notes (for a lighter black licorice taste, try La Clandestine), and guests receive a 1-ounce pour of their selection. While diners can obviously enjoy a glass before or with their meal, the drink is best served as a digestif after savoring one of the restaurant’s delectable entrées, like the juicy Organic Chicken in a vin jaune sauce. THE MOSCOW MULE CART AT JARDIN INSIDE ENCORE LAS VEGAS
Available during dinner service, the Moscow mule trolley at this American restaurant serves a variety of flavors, including vanilla lemongrass and blueberry orange cranberry. Guests can watch as their drink is mixed tableside in a giant copper mule mug that holds an entire bottle of vodka and all the fixings, then ladled out like punch in individual copper cups. This wooden cart features more than a dozen of the rarest scotches in the world, like the 25-year Macallan. Guests can enjoy a 2-ounce pour of their choice with their dinner or try different selections with each course. The smooth, 18-year Gordon & MacPhail Bladnoch pairs perfectly with the Italian Bufala Burrata served with smoked speck, while the 28-year Adelphi Selection Longmorn complements the steakhouse’s charred New York Strip seasoned with salt and pepper.
